I'd say I would typically spend around 30 minutes to change the wheels, and I do it, may be, once or twice a month, so quite frequently. There is obviously some room for improvement there but 2.5 minutes doesn't sound realistic.
I have been track riding 13 years, and currently I have 3 front rims and 4 rear rims, for different rubber compounds, and I swap rims/tyres max few times per one track day, if track surface temperature changes (or tyre wears out), to get the max life out of the tyres. It really saves a lot of money when you are riding fast, and you have suitable compound for the circumstances. The faster you ride the more exponentially tyre wear rises. And you can destroy a new tyre (front 210 usd, rear 280 usd) in one set if you have wrong compound.
Anyhow, 2.5 mins IS realistic.
